Breakfast is the battle that I tend to lose almost everyday. Every morning begins with the same dilemnas – What should I make for breakfast? How much time do I have to cook? How much energy do I have to scream at the kids? Should I even bother waking up? – And they always end the same way each day- Pour down some horrid store bought cereal into a bowl of milk and voila ..breakfast of “champions” done….and we are all on our merry way out the door running to catch the school bus.
Last week I was having this conversation about the “Breakfast of Champions” with an old friend, and she was just horrified beyond imagination. Energised by her reaction, I went home to have a big discussion with my kids about the need to eat healthy. We got a menu in place got rid of the store bought cereal and replaced it with more nutritious options like organic eggs, ragi dosas etc. We were all good to go…..but then Monday Morning came and reality struck….. and it became inherently apparent that in the chaos of the morning, even an agreement written in blood would not stand a chance.
My fundamental issue is that my little guy is slow to wake up and slow to eat ANYTHING that is not sweet. Since I leave for work pretty early too, it’s very easy to give in. So I have had to think long and hard about how to make sweet things nutritious. And this recipe works on all fronts for me. It combines the goodness of Ragi with the antioxidant properties of 100% Cacao and protein of free-range eggs. I’m in heaven and it’s put a smile on my lil’ guys face. Total Yield: 4 pieces
¼ cup Ragi
¼ cup 100% Cacao Powder
2 Whole eggs
1 cup of milk
2 tbsp sugar
2 tbsp butter (melted)
TIP: If you don’t have a waffle machine, add a ¾ cup milk to the recipe and use the same batter to make delicious pancakes.
- Weigh out all your ingredients. Mix all ingredients other than butter in a bowl.
- Whisk together until the batter is smooth
- Add the melted butter and your batter is ready to go.
- Pour into a hot waffle machine and let cook for 2-3 minutes. Turn it over for another 3 minutes. (Add a little more butter if you’d like a crispier skin)
Crisp on the outside and fluffy on the inside, your kids will never miss maida/all purpose flour in this recipe. Serve with Nutless Nutella or your child’s favourite sauce
