For everyone who has been brought up in Andhra Pradesh, Mango Rice has always been the perfect substitute for lemon rice. It’s always there in our Ugadi meals and growing up we could never get enough of it. The tartness of raw mangoes coupled with the heat of chilies gives the perfect blend of this recipe that I assure you will make you nostalgic with the very first bite.
And for the others, who haven’t been brought up on mango rice. If you are a fan of Lemon Rice, then you will surely love this Raw Mango rice recipe. It is so simple to prepare – All you need is some rice, a few mangoes and 15-20 mins of your time.
1 Cup Unpolished Brown Rice
4 raw mangoes (cut into small pieces)
3 tbsp Sesame oil
1 tbsp Channa Dal
1 tsp Jeera
1 tsp Urad dal
4 Red Chillies
6 Curry Leaves
Take one cup of rice and add 3 cups of water and 1 spoon of salt. Pressure cook unpolished rice for 6-7 whistles. Keep a few minutes longer if you prefer a softer texture. Remove the rice from heat and spread on a plate to cool.
In the meantime, make a tadka with listed ingredients.
Once the tadka is ready, toss in the cut mangoes for a few minutes followed by the rice. Toss for a few minutes and add salt to taste. Enjoy a mango pickle or curd pachadi.
